Cranberry Beef Bourguignon – The Bread Stone Ovens Firm

This recipe for Cranberry Beef Bourguignon is scrumptious and straightforward to make in your wood-fired oven, excellent for these chilly winter days! 


  • Bacon
  • Beef
  • Flour
  • Beef Broth
  • Garlic
  • Salt
  • Pepper
  • Thyme
  • Pink Wine
  • Olive Oil
  • Bay Leaves
  • Tomato Paste
  • Butter
  • Cranberries
  • Onions
  • Mushrooms
  • Carrots


  1. Warmth the oven to 250 levels.
  2. Chop the bacon into smaller items, add to the forged iron skillet and sauté within the oven. 
  3. Whereas the bacon cooks, chop the opposite greens.
  4. As soon as the bacon has cooked, take away from the skillet and put aside. 
  5. Dry your meat, then add to the skillet with the fats from the bacon, tossing to coat evenly, earlier than putting the skillet again into the oven. 
  6. As soon as the meat is cooked, take away it from the pan and set it apart with the bacon. 
  7. Add the onion to the meat drippings within the skillet, season with salt and pepper, earlier than returning the skillet to the oven to prepare dinner the onions till tender. 
  8. When the onions are cooked, take away the skillet from the oven and deglaze with cognac.
  9. Add the meat again to the skillet and toss with the onions earlier than transferring to a dutch oven.
  10. Clear the pan with beef broth and pink wine, earlier than pouring all of it again into the dutch oven.
  11. Add the cranberries, tomato paste, bay leaves, garlic, thyme, carrots and mushrooms to the dutch oven.
  12. Season with salt, cowl with the lid and place the dutch oven into the oven for about 2 hours.
