For the second February recipe, I made the Copenhagen Rye Cookies, full of chocolate and quite a lot of seeds. The seeds added each crunch and taste.  I saved getting a touch of banana, which I believe was from the flax seeds.  I additionally love the sprinkling of Maldon salt on the highest.

Apparently, I forgot to set the timer for the final batch.  I bought distracted and did not assume a lot about it till I noticed I hadn’t heard the timer ring.  Hmmm.  Had I already taken them out of the oven?  So I checked.  And, there they have been, merrily cooking away and getting over baked!  Though they have been additional brown, I made a decision they have been salvageable.  They have been particularly tasty when dunked in a sizzling beverage, so no hurt executed.   (I would not suggest this, nevertheless.)
