Garlic Buns
Elements:
Dough:
300g Blue Jacket bread flour
20g advantageous sugar
1/2 tsp salt
1 tsp immediate yeast
30g curry leaves + 10g unsalted butter
210g curry leaves water
10g unsalted butter
Garlic butter:
60g unsalted butter
25g minced garlic
15g parmesan cheese powder
1/4 tsp salt
Dried parsley
Methodology:
1. Rinse & drain curry leaves. Fry
them with butter until fragrant on a pan with medium warmth. Off warmth & mix
with water. Sieve & put aside
2. Add all dough elements (besides
butter) in a mixer fitted with a dough hook. Knead until dough is delicate. Add in
butter & knead until elastic. Proof 1hr
3. De-gas dough. Divide into 12
parts. Around the dough & relaxation them for 10mins. Around the dough once more
& positioned in mould. Proof for 1hr
4. Make a slash within the heart of every
dough & pipe in garlic butter. Baked in a preheated oven @200 for 5mins.
Take away from oven & pipe extra garlic butter in every dough. Proceed to bake
for one more 10mins
