  • 2 oz. El Mayor Reposado Tequila
  • ½ oz. banana peel oleo saccharum
  • ½ oz. robust chilly brew
  • 3 dashes Mexican chocolate bitters  topped with toasted sesame coconut chilly foam



Preparation

  1. add all components to mixing glass, stir with ice, pressure over giant dice in rocks glass and high with toasted sesame *coconut chilly foam, sprinkle with black sesame seeds.

*Chilly Foam

  • 1 cup coconut cream
  • ¼ cup toasted sesame easy syrup

Preparation


  1. 1 cup coconut cream, ¼ cup toasted sesame easy syrup, chilled and hand whipped or allotted from whipping siphon.

Preparation

  1. Shake all components with ice and pressure into chilled coupe glass.
  2. Garnish with tempered and formed darkish chocolate from the infusion formed like twill.
  3. *Infusion: 250 g darkish chocolate chopped up and rested in bottle of El Mayor Reposado for about 2 days.
  4. Shake the bottle each 6-8 hours.
  5. Effective pressure and rebottle the tequila.
  6. Reserve the chocolate from the infusion and soften right down to make garnish.

**Vanilla Brown Sugar Syrup


Elements


  • 500g water
  • 500g darkish brown sugar
  • 50g vanilla paste

Preparation


  1. Carry to simmer to soften sugar.
  2. Stir effectively and bottle.

  • ½ oz. Rooibos-Apple Shrub*
  • ¾ oz. Zucca
  • ¾ oz. Lemon juice
  • 3 drops 18:21 Fragrant bitters



Preparation

  1. “Mix all components in a tin with ice. Shake for 20 seconds and double pressure over a big dice.
  2. Garnish with an apple fan and grate recent on high, freshly grated cinnamon.
  3. (Star anise pod non-obligatory).

*Rooibos-apple shrub


Elements


  • 1 ¼ c. honeycrisp apples
  • ¾ c. cane sugar
  • ½ c. rooibos tea
  • 1 c. apple cider vinegar
  • 1 cinnamon stick
  • 4 cloves

Preparation


  1. Mix components in a mason jar and shut tightly.
  2. Shake, and refrigerate for 2-3 days.
