Working towards baguettes is a lot enjoyable! I made a decision to scale down my baguettes from 29% soybean 78% hydration to 23% soybean 70% hydration to emphasise shaping and scoring.
apparently soybean is simply too fatty to permit me to supply open crumb. Nonetheless should observe!
