English Muffins
Components:
300g Blue Jacket bread flour
50g Blue Jacket wholewheat flour
15g positive sugar
1 tsp SAF instantaneous yeast
1/2 tsp salt
240g water
Cornmeal Technique:
1.
Put all components (besides cornmeal) in a mixing bowl fitted with a
dough hook. Knead until the dough is tender & elastic. Proof for 1hr

De-gas dough onto a barely floured desk high. Divide into 8 potions.
Around the doughs & relaxation 15mins. Mud dough with cornmeal &
flatten dough. Put into mildew. Proof for 1hr
3. Bake in a preheated oven @ 180C 14mins
