Extra Christmas baking as we speak, I baked a pair of apple cranberry vacation desserts with lemon icing for extra gifting.  I had slightly further batter that didn’t match within the loaf pans so put that in two ramekins so we may style this cake.

For 2 loaf pans – 8 x 4” and 9 x 4 x 4” pullman 

5 cups ap flour

1 ⅔ tsp baking soda

0.833 tsp salt

 

2.5 cups vegetable oil

5 eggs

2.5 cups granulated sugar

0.833 cups packed brown sugar

1 ⅔ tbsp cinnamon 

0.833 tsp nutmeg

2 tbsp rum

1 ⅔ tsp vanilla

5 apples ¼” diced

2 cups cranberries coarsely chopped

 

 

Lemon drizzle icing – 1 ½-2 cups of icing sugar and juice from simply over ½ a big lemon.

 

Place a rack within the center place and preheat oven to 350ºF.  Butter and flour the pans.

 

Sift collectively flour, baking soda and salt in a bowl.

 

Whisk collectively oil, eggs, sugars, cinnamon, nutmeg, rum and vanilla in a big bowl till simply mixed.  Fold in flour combination till simply mixed, then fold in apples and cranberries.  The batter will really feel thick and heavy.  Spoon batter into pans.

 

Bake till a picket choose inserted into the middle comes out clear.  If baking all three loaves directly it could take as much as 1 hour 50 minutes.  For one loaf about 1 hour 15 minutes.  Take away to rack to chill for 30 minutes after which take away from the pans and permit to completely cool on the cooling rack.

 

 

Make a lemon drizzle icing and pour onto every absolutely cooled loaf.
